Cafe Angelight
Avocado & Feta Toast
Serves 21 avocado, peeled and pitted
1/2 fresh lemon or lime juice
1 tablespoons good quality olive oil, plus more for drizzling
dash cayenne4 1/2-inch-thick slices sourdough bread
1/2 cup good quality feta, crumbled
Fresh cilantro, parsley or mint, for garnish
Gently mash the avocado in a bowl with the lemon juice, olive oil, cayenne, salt and pepper. Lightly toast the bread, then divide the avocado mash among the 4 slices. Top each avocado toast with feta, drizzle with olive oil and garnish with herbs.
Leek and Potato Soup
4 or more servings            from the New York Times International Cookbook
3 large leeks
1-2 medium onion, finely chopped
5 TBS. butter
3 medium potatoes, peeled and cut into 1/2 inch cubes
4 cups chicken stock
1 cup heavy cream
Salt and freshly ground black pepper
​Chopped chives (optional)


Instructions
​
Trim the root end of the leeks, then cut off and
discard approximately half of the green stems.
Slit the leeks several times lengthwise from the stem and
rinse well under cold water.
Some leeks are rather sandy.
Chop the leeks and cook them with the onion in the butter.
Cook three minutes, stirring.
Add the potatoes and chicken stock and bring to a boil.
Simmer about 15 minutes, or until the potatoes are tender.
Add the cream and bring just to a boil.
At this point, cool for a few minutes.

Mix the soup a few short minutes in a blender.
Season with salt and pepper to taste and serve hot,
sprinkled with chopped chives, if desired.
Chicken Yummy for 2 ( double for 4 )

olive oil to coat wire
1 skinless, boneless chicken breast, washed, fat off, cut in quarter pieces
¼ cup ranch dressing
⅔ cup Panko ( *not bread crumbs, but may use 1/3 cup crushed cheddar crackers with the 1/3 Panko )
⅔ cup finely grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried parsley flakes
1 teaspoon paprika
Instructions
Preheat oven to 350 degrees
Cover a flat baking sheet with aluminum foil
Place a wire rack on top of the flat baking sheet and coat with olive or coconut oil.
Put chicken quarters into a resealable plastic bag. Add ranch dressing; seal and shake bag to coat chicken evenly.
Mix Panko, Parmesan cheese, garlic powder, parsley, and paprika together in a bowl with a wooden spoon. Pour into the bag with the chicken. Seal and shake bag to coat thoroughly.
Remove from bag; place on rack in a single layer.
Bake in the preheated oven about 40 minutes. Turn oven off.
Turn broiler on high; broil until crispy about 1minute.

Mullein - organically grown in Macon, GA
I will be gathering the bottom leaves, tying them upside down, and drying for tea.

It was a blessing to discover this herbal tea around the early 1970s, as a hippie exploring a healthy lifestyle. I had found the best remedy for my recurring sore throat! I mixed the tea with any mint tea and added honey to combat the flavor.
